Pumpkin Bread (Gluten and Dairy Free)

ingredients:

  • 3C oat flour
  • 1.5 C sugar
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg (optional)
  • 1 tsp ground cloves (optional)
  • 2C canned pumpkin
  • 1C apple sauce (or vegetable oil)
  • 4 eggs
  • 2/3 C semi sweet chocolate chips (optional)
  • 1/2 C walnuts (optional)
  • serve with whipped dairy free cream cheese or dairy free butter

instructions:

    1. preheat oven to 350 degrees F
    1. grease baking pans with butter
    1. in a large bowl mix all dry ingredients well except for chocolate chips and walnuts 
    2. add applesauce (or oil), and pumpkin, stirring until well combined
    3. add eggs, one at a time, blending thoroughly
    1. add remaining optional ingredients, mix gently
    1. pour batter into desired pans (I use 2 9.5 x 5in loaf pans, you can also use muffin pan)
    2. bake to desired consistency- I recommend 35 minutes (20 for muffin pan)
  1. optional- garnish whipped cream cheese
  2. enjoy 🙂
