Avocado “Toast”

ingredients:

  • 1 sweet potato
  • 1Tbsp olive oil or olive oil spray
  • 1 avocado
  • 1 Tbsp chili flakes (optional)
  • 1 lime (optional)
  • 2 eggs
  • 1 tsp apple cider vinegar (optional)

instructions:

    Preheat oven to 425 degrees Fahrenheit
    Bring a small pot of water to a boil, add a tsp of apple cider vinegar to the water if you have it.
    While the oven and water is heating, wash and thinly slice the sweet potato and place the slices on a cookie sheet (as shown below)
    Sprinkle or lightly spray sweet potato slices with olive oil
    Bake for 10-15 minutes depending on thickness of slices until soft
    Once the water is boiling, crack the eggs and gently place in the water. Cook for 4-5 minutes.
    Cut avocado in half and scoop out the insides into a bowl. Squeeze lime juice and add chili flakes if desired. Mix well.
    Remove sweet potatoes from the oven and place 2-3 slices on a plate. Top with avocado mixture and an egg. Salt and pepper to taste. Enjoy!
