Beet & Endive Salad

ingredients:

  • 2 endives
  • 2 beets (quick fix- buy pre-cooked from Trader Joe’s refrigerated section)
  • 1-2 handfuls lettuce or mixed greens
  • italian vinaigrette to garnish (optional)
    • red wine vinegar
    • olive oil
    • good seasons italian seasoning
  • balsamic vinaigrette to garnish (optional)
    • olive oil
    • balsamic vinegar
    • garlic (optional)
    • dijon mustard (optional)
    • honey (optional)

instructions:

  1. cut endives into bite size pieces
  2. if beets are raw, cut into chunks and boil until soft (about 30 minutes). If pre-cooked, cut into bite size pieces
  3. place lettuce in bowl
  4. lay cut endives and beets on top
  5. optional- drizzle with salad dressing
  6. enjoy 🙂
