ingredients:
- 3C oat flour
- 1.5 C sugar
- 1/4 tsp baking powder
- 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg (optional)
- 1 tsp ground cloves (optional)
- 2C canned pumpkin
- 1C apple sauce (or vegetable oil)
- 4 eggs
- 2/3 C semi sweet chocolate chips (optional)
- 1/2 C walnuts (optional)
- serve with whipped dairy free cream cheese or dairy free butter
instructions:

- preheat oven to 350 degrees F

- grease baking pans with butter

- in a large bowl mix all dry ingredients well except for chocolate chips and walnuts
- add applesauce (or oil), and pumpkin, stirring until well combined
- add eggs, one at a time, blending thoroughly

- add remaining optional ingredients, mix gently

- pour batter into desired pans (I use 2 9.5 x 5in loaf pans, you can also use muffin pan)
- bake to desired consistency- I recommend 35 minutes (20 for muffin pan)
- optional- garnish whipped cream cheese
