Pumpkin Bread

serves 20

ingredients:

  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 3.5 C flour
  • 1.5 C sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg (optional)
  • 1 tsp ground cloves (optional)
  • 2C canned pumpkin
  • 1C apple sauce (or vegetable oil)
  • 4 eggs
  • 2/3 C semi sweet chocolate chips (optional)
  • 1/2 C walnuts (optional)
  • whipped cream cheese (optional)

instructions:

  1. preheat oven to 350 degrees F
  2. grease baking pans with butter
  3. in a large bowl mix all dry ingredients well except for chocolate chips and walnuts 
  4. add applesauce (or oil), and pumpkin, stirring until well combined
  5. add eggs, one at a time, blending thoroughly
  6. add remaining optional ingredients, mix gently
  7. pour batter into desired pans (I use 2 9.5 x 5in loaf pans, you can also use muffin pan)
  8. bake to desired consistency- I recommend 35 minutes (20 for muffin pan)
  9. optional- garnish whipped cream cheese
